AMCAS won't let you add future activities. That being said, you have two options: (1) Like you said, wait until you return to do your AMCAS. (2) Don't include it on your AMCAS, but write about it on your secondaries. I would think 2 would be the best option, since you won't lose any time and the med schools will still get to hear about it.
