You're confusing things. The game has a screenshot tool as well as steam. Pressing F12 screenshots using the Steam Overlay, that can't be altered within FFXIV, you need to change it in the Steam settings. To take a screenshot using FFXIV instead of Steam, you need to hit the Print Screen button.

UISAVE.DAT - This is for the UI save stuff. If you only use the one HUD setting then this file is not necessary for you - ADDON.DAT is your HUD layout. Basically the way I do it is I play FFXIV, take screenshots, log off, switch to desktop mode, plug in my phone, and transfer the files.
